I had a lot of dinner parties recently and don't always have time to make challenging cakes so here is another which I made really quickly and was delicious! I got the recipe from a magazine in while waiting for my sis in hospital so I'm sorry but I don't have the link.
Basically:
buy shortcrust pastry
Make cream:
500g Mascarpone cheese
80g icing sugar
vanilla extract
Add blueberries on top and it's finished!
