I will be the only vegetarian this Christmas at our house and I have decided to really make an effort and make a delicious veggie roast. I still haven't decided which one to make but here are some delicious recipes I found.
All-in-one honey roast veg
800g main-crop potatoes, peeled and cut into 3–4cm pieces
600g parsnips, trimmed and peeled, halved or quartered lengthways where thick and cut into 2 shorter lengths
100g unsalted butter, melted
sea salt, black pepper
600g brussels sprouts, base trimmed and outer leaves discarded
2 tbs runny honey
Nut Roast
- 1 onion, chopped
- 2 carrots, grated
- 1 clove garlic
- 115g chestnut mushrooms
- 175g cooked brown rice
- 115g brown breadcrumbs
- 55g finely chopped almonds
- 55g finely chopped Brazil nuts
- 115g grated Cheddar cheese
- 2 medium eggs
- 1tbsp fresh oregano
- 1tbsp basil
- 1tbsp salt
- 1tbsp pepper
Parsnip and Cashew Nut Roast Recipe
1 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, crushed
8 oz (225 g) cashew nuts
4 oz (110 g) breadcrumbs
8 oz (225 g) mushrooms, finely chopped
1 egg (or 2 tbsp potato starch or soy flour for a vegan alternative)
3 medium parsnips, cooked and mashed
1 tsp fresh rosemary / 1/2 tsp dried rosemary
1 tsp fresh thyme / 1/2 tsp dried thyme
1 tsp yeast extract (e.g. Marmite or vegemite)
1/4 pint (150 ml) hot water
salt and pepper
margerine or soya spread for greasing tin
